Don Manuel's

Don Manuel's is the main restaurant at Waldorf Astoria Los Cabos Pedregal, the resort you reach by driving through a private tunnel under the Pedregal hill to the Pacific side of Land's End. Where sister restaurant El Farallón is all about seafood on the cliffs, Don Manuel's is the all-day room: breakfast, lunch and dinner, with a terrace facing the open ocean. It's far enough from the marina to feel like a different world, yet it's only a 10 to 15 minute taxi from Villa 1.

The kitchen describes its food as an evolution of modern Mexican cooking, led by Chef Manuel Huerta from Guanajuato. The sample menus list huevos rancheros, chilaquiles, Cabo Benedicts and enchiladas mineras at breakfast; tacos, ceviche, crudos and poke bowls at lunch; and braised short rib, slow-cooked lobster, grilled wagyu, pan-seared sea bass and charcoal-grilled chicken pibil at dinner. Reviewers also describe a taco tasting called Travesía with paired cocktails, and a breakfast with French toast and a mimosa service.

Hours are breakfast 7 to 11 AM, lunch 11 AM to 5 PM and dinner 5 to 10 PM. Reservations go through the resort (phone or email) or OpenTable. The bar, El Bar de Don Manuel's, received a Forbes Travel Guide Star Bars award for 2026, so arrive early for a drink. Reviews in August and September 2026 are glowing, with staff praised by name; the only real hurdle is the price, which is Waldorf-level.

Our tip: if you want the Pedregal experience without committing to a full tasting dinner, come for breakfast. The light over the Pacific in the morning is lovely, and it's the most affordable way into the resort. Tell the taxi driver you have a reservation; security at the Pedregal gate will ask. Smart casual is the safe choice for dinner.
