LÍMO Heritage Kitchen is the restaurant at Suelo Sur, a small open-air food and drink complex at the edge of San José del Cabo's historic center, reached by a short dirt road with free parking. Chef Guillermo J. Gómez cooks with fire, mixing Mexican vaquero traditions with Argentine gaucho grilling, and buys produce from farms in the San José basin. The MICHELIN Guide selected it. The menu is organized by where things come from and how they're cooked: garden, sea, roots and fire, with a wood oven and a grill the kitchen calls the Infiernillo.

If you've been searching for farm to table in Cabo and Flora Farms is booked, this is the place we'd send you. From the menu we saw and the MICHELIN write-up, the dishes to look for are the pan de brasas (a blue corn bread baked in the embers), smoked yellowtail with a habanero coconut water, a Berkshire pork matambre, chargrilled octopus with mango curry, and totoaba baked in a salt crust for two. There's also a tomato and goat cheese plate using cheese from Rancho Cacachilas. The menu changes with the seasons, so treat this as a guide rather than a promise.

Suelo Sur also has a beer garden (Entorno), a cocktail bar (Bar Búho) and a playground, all under a huge tree that's said to be around 200 years old, and it's pet friendly. That makes it one of the few serious dinners in town that also works for families with young kids: parents eat, kids run around within sight.

Go around sunset, when the fire is going and the heat has dropped; it's worth the 40 minutes by car or taxi from Villa 1. Book on OpenTable or by WhatsApp. Dinner starts at 5 PM; MICHELIN lists it as open daily while its review listing shows Sundays closed, so check before you set off.
